Laudella

Laudella is a typical crafted cheese of a soft consistency and mild flavour, made from full fat cow's milk. It is a typical table cheese that has been matured for at least 4 months.

Of a soft texture, this white or straw yellow-coloured cheese is riddled throughout with small holes, known as "eyes". Its taste is sweet, yet assertive and intense, without ever being piquant. The rind is straw yellow in colour, smooth, even, dry and clean. It is generally eaten uncooked at the end of a meal or as a starter, but may also be fried or grilled, typically accompanied by maize polenta.
